Josh Crowe, Chef/Partner at Monkland Tavern
Chef Josh Crowe tells stories, both historical and modern, through his innovative take on Canadian cuisine. His background as a painter and visual artist is evident in his sincere commitment to market-driven Canadian fare that evokes emotion and plays with the intersection of classical and contemporary techniques and fresh, local ingredients. Influenced by his vibrant adopted hometown of Montreal, Chef Crowe’s recipes are borne of his respect for, and fascination with, the confluence of cultures that created Québec: Indigenous Peoples, early French and English settlers, and, more recently, Mediterranean and Middle Eastern immigration. Today, Chef Crowe’s food highlights not only his commitment to local, sustainable ingredients, but his love and knowledge of the region he calls home. From foraging and fishing in the Gaspésie, to his partnerships with regenerative, organic farms, Chef Crowe acts as a bridge between the local environment and his diners.
Chef Crowe’s accomplishments include nearly a decade of participation in Food Day Canada, including five Gold Medals. He was honoured to showcase his interpretation of modern Quebec cuisine at The Flavors of Canada event at The James Beard Foundation in NYC (2016). Working with industry leaders, including his business partner Barbara Irwin and Food Day Canada founder Anita Stewart, has given Chef Crowe a thoughtful perspective on how restaurants can best nurture producers, employees, their community, and clients. Through initiatives like mindful ingredient sourcing and management, and installing an eco-friendly water purification system in the restaurant in order to eliminate bottled waters (both still and sparkling), Chef Crowe keeps an eye to sustainability.
